Low fat MOFONGO (smashed plantains)

2 green plantains, pealed y cut in slices 1/2 inch thick
2 cups of fat free – low sodium chicken broth or chicken bullion
1 1/2 spoon of oil
3 - 4 garlic cloves, thinly sliced
1 small onion, thinly sliced
1 slice of 1 ounce of Canadian bacon cut in fine strips
Salt and ground black pepper
2 spoons of scallions or scallion’s leaves thinly sliced

 

Place the plantains and chicken broth on a big pot over medium heat. Boil over medium heat during 10 minutes or until the plantains are very tender. Drain and keep the broth for later. Keep the plantains on the drainer.

 

Warm the oil up in a pot. Add garlic, onion, and bacon and fry during 4 minutes or until the onion starts to turn lightly golden. Add the plantains and smash them with a mortar or with the back of a wooden spoon. Little-by-little add the amount of broth necessary to obtain the consistency of a thick and creamy puree. Add salt and pepper to taste.

 

Place them on a deep bowl or plate and add the scallions or the leaves.
