Turkey: After the Holidays

Turkey Salad

Serves 4

2 cups diced, cooked chicken or turkey
½ cup dried cranberries
½ cup diced celery
2 eggs, hardboiled, chopped
½ cup lowfat mayonnaise or salad dressing
½ tsp. sugar
½ tsp. salt

  1. Combine turkey, cranberries, celery and eggs.
  2. Add remaining ingredients and toss gently.
